First off, a very Happy New Year to all our followers! The team at Bo House would like to wish you all the best for 2012 and hope that it is filled with health, happiness and prosperity!

At Bo House, our plans for 2012 are filled with putting new vibrant energy into our venue, which will include tons of exciting events, activities and upgrades, so watch this space for announcements throughout the year.

Our first instalment for you this New Year is a recipe of one our favourite salad dishes, since we all know that a detox at this time of year is well and truly needed. Our Quinoa Salad, with its numerous health benefits, will definitely help you on your way.

Often referred to as a ‘superfood’, quinoa is packed full of quality proteins and an abundant supply of amino acids. A great source of magnesium, it is great for high blood pressure. Filled with vitamin B2, it is also said to help relieve migraines (so if that hangover is still not shifting this could be the perfect cure!). And finally, Vitamin E, B6, iron and zinc bring numerous other health benefits, from great looking skin to an overall fighting fit feeling.

Follow these simple directions for a tasty and easy to knock together dish that can be a perfect accompaniment to your latest health drive!

Quinoa salad with capsicum, cheese and sundried tomato                     

  1. Boil 240g of Quinoa for ten minutes then drain.
  2. Dice 80 grams of yellow zucchini, 80 grams for green zucchini, 80 grams of red capsicum, 80 grams of yellow capsicum and sauté in a frying pan.
  3. Allow all the ingredients to cool, and then mix together with 20ml of lemon juice, 32ml of olive oil dressing.
  4. Add salt and pepper to taste and garnish with finely chopped parsley, basil, parmesan and sundried tomatoes.
